How to make matcha green tea ice cream

If you’re using an ice cream maker, this recipe comes together in just four simple steps. Let’s see how it’s done!

Step 1: Place the base of your ice cream maker in the freezer the night before.

Step 2: Add all of the ingredients to a medium mixing bowl and whisk until all the sweetener and salt have dissolved.

Step 3: Pour the mixture into your ice cream maker and follow the manufacturer’s instructions to churn your ice cream, usually 15 – 20 minutes of churning.

Step 4: Once the ice cream is thickened and icy, scoop into a bread loaf tin or similar dish.

You can serve the ice cream immediately for a soft-serve style. Alternatively, you can freeze it for 1 hour to give it more firmness, closer to a traditional ice cream texture. I like to serve mine with chopped pecans!

How to make no-churn ice cream

No ice cream maker? No problem! Just follow this easy no-churn method.

Simply mix all of the ice cream ingredients together, then pour into a freezer-safe dish. Freeze for 45 minutes, then mix well and return to the freezer. Repeat every 30 – 45 minutes until the ice cream has reached your desired consistency.

Why do you use vodka for homemade ice cream?

The goal of adding vodka to this recipe is to keep the texture of the ice cream a little softer. Because alcohol doesn’t freeze, a mixture that includes vodka will be prevented from freezing solid. At such a small quantity, you certainly shouldn’t taste it or feel any kind of effects from it.

However, if you prefer not to include the alcohol or plan to share this ice cream with anyone under the legal drinking age, feel free to omit the vodka entirely. Before serving, just make sure to let it sit out at room temperature for a few minutes to soften.

Storage

Homemade ice cream is a perfect dessert to make in big batches and save for later. No more being tempted by expensive keto-friendly pints at the grocery store!

    3 cups heavy cream, 6 tablespoons granulated stevia, ¾ teaspoon xanthan gum, 2 teaspoons vanilla extract, 3 tablespoons vodka, 1 tablespoon green tea matcha powder, ½ teaspoon fine sea salt
  • Pour the mixture into your ice cream maker and follow the manufacturer’s instructions to churn your ice cream, usually 15 – 20 minutes of churning.
  • Once the ice cream is thickened and icy, scoop into a bread loaf tin or similar dish. Serve immediately or freeze for 1 hour.

Notes

This recipe is for 12 servings of ice cream.
No-churn method: Mix together all of the ingredients, then pour into a freezer-safe dish. Freeze for 45 minutes, mix well, then return to the freezer. Repeat every 30 – 45 minutes until the ice cream has reached your desired consistency.
The vodka helps keep the ice cream texture softer. You can omit if you prefer.
Extra ice cream can be stored covered in the freezer for up to 3 months.
