Step 1: Heat the honey for about 10 seconds in the microwave to make it easier to blend.
Step 2: Combine the honey and mustard in a small bowl.
Step 3: Place a strip of salmon on a cutting board. Spread on a thin layer of the honey mustard mixture, place 2 or 3 cucumber strips at one end of the salmon strip, then roll it all up. Move the roll to a serving dish.
Step 4: Repeat with remaining salmon strips.
You can serve your salmon rolls immediately or cover them with plastic wrap and refrigerate until you’re ready to enjoy.
Is smoked salmon good for diabetics?
Smoked salmon inherently has a lot of sodium, so I know some diabetics are a bit skeptical about using it. However, when enjoyed in moderation, I think smoked salmon’s health benefits definitely outweigh the sodium aspect!
This fish is a great source of protein as well as vitamins and minerals like niacin, vitamin B12, selenium, and phosphorus. It has also been shown to have moderately anti-inflammatory properties.
On top of that, salmon is an excellent source of omega-3 fatty acids, otherwise known as “good fats!” It’s also naturally a zero-carb food, so depending on what you serve it with, it should have a low impact on blood sugar.
Storage
These rolls are great to make in advance to serve to guests or grab when you need a quick bite. I like making a big batch to enjoy throughout the week!
