Keto Pizza Casserole

Ingredients

For the base

  • 5 cups raw cauliflower rice
  • 1 cup mozzarella cheese (grated)
  • 1 tbsp. dried Italian herbs (you can use a mix of thyme, basil and oregano)
  • 1/2 tsp. salt
  • 1 tsp. pepper

Assembly

  • 1/4 cup low-carb marinara sauce
  • 1 cup mozzarella cheese (grated)
  • 2 oz. pepperoni slices
  • other desired toppings

Instructions

  • Preheat your oven to 400F (200°C).
  • Cook your cauliflower rice in a pot of boiling water for 10 minutes until soft. Drain and wring out the excess liquid, set aside.
  • Add all of the ingredients for the cauliflower pizza base into a medium mixing bowl. Mix together thoroughly. 
  • Add the cauliflower casserole base to a casserole dish or large cast iron skillet. Smooth over the surface and press down the base gently. 
  • Bake the base for 20 minutes until lightly browned on the top and edges. Remove from the oven and set aside. 
  • Spread the marinara sauce over the baked cauliflower base. 
  • Add mozzarella cheese and your desired toppings. I went with a simple pepperoni pizza but you could really add anything you like here. 
  • Bake the pizza casserole for 15 minutes and broil for the last few minutes to crisp up the toppings and melt the cheese all the way through. Remove from the oven and serve immediately. 

Notes

This recipe is high in sodium if you use regular mozzarella and pepperoni. You can use low-sodium cheese and other toppings if you are trying to limit your sodium intake.
