3-Ingredient Guacamole Deviled Eggs

Ingredients 

  • 6 large eggs, (hard-boiled and cooled)
  • 6 tablespoons guacamole
  • chili powder

Instructions

  • Slice your hard-boiled eggs in half lengthwise.
    6 large eggs
  • Scoop the yolks into a small bowl, add the guacamole, and mix well.

  • Spoon or pipe the mixture back into the egg halves.
  • Sprinkle with chili powder.

Notes

This recipe is for 6 servings. Each serving is 2 egg halves.
If you're making this dish for a crowd, I recommend piping the egg yolk and guacamole mixture into the egg halves. This will give you the best presentation.
These deviled eggs can be prepared up to 2 hours in advance — after that, the avocado will start to oxidize and turn brown. The eggs will still be safe to eat, oxidation only affects the appearance.
To store them for longer, squeeze a little lime over the guacamole and wrap the eggs in saran wrap. Allow the plastic to sit right on the guacamole so it minimizes any contact with the air. Store in the refrigerator.
