Celery Root Fries

Satisfy your cravings with delicious oven-roasted celery root fries! Easy to make, vegan, great for dipping, and healthier than deep-fried potato fries.

Ingredients 

  • 2 celery roots, (about 2 pounds)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh rosemary, (or Italian seasoning)
  • 1 tablespoon black pepper

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking tray with baking paper for easy clean-up.
  • Cut the ends off the celery roots, then peel them to remove the thick outer skin. Cut the celery roots into thin matchsticks.

  • Bring a pot of cold water to a boil, then add the celery roots and cook for 2 minutes.
  • Drain and set aside to cool for 5 minutes.
  • Add the fries, oil, and fresh rosemary to a large mixing bowl. Toss until the fries are well-coated.

  • Place the fries in a single layer on the prepared baking sheet. Grind the black pepper on top.

  • Bake for 30-35 minutes, flipping the fries halfway through.

Notes

This recipe is for 6 servings of fries.
Peeled celery root should be used right away or stored in water to prevent discoloration.
Leftovers can be stored in an airtight container in the refrigerator for about 2 days.
Reheat in the oven.
