This avocado smoothie with leafy greens is a great way to add some healthy fats to your diet. Plus, it’s so easy to make — just toss everything in a blender!

Ingredients 

  • 2 cups baby spinach
  • 1 cup baby kale
  • 2 mint sprigs
  • 1 avocado, (peeled and seed removed)
  • 1 tablespoon lemon juice, (freshly squeezed)
  • 2 cups water
  • ½ cup ice cubes

Instructions

  • Add your spinach, kale, mint, avocado, lemon juice, and water to a high-powered blender. Add the ice cubes last.
    2 cups baby spinach, 1 cup baby kale, 2 mint sprigs, 1 avocado, 1 tablespoon lemon juice, 2 cups water, ½ cup ice cubes
  • Blend on high speed until the mixture is smooth.
  • Optional: You can a few drops of Stevia to make the smoothie sweeter

Notes

This recipe is for 2 servings of avocado green smoothie.
If you'd like to add a touch of sweetness, try a few drops of stevia or a tiny bit of honey.
You can substitute the greens used with whatever you like (or have on hand).
Don't halve the recipe, you need enough volume in the blender to get the smooth consistency. If you only want one serving, I recommend making both servings and then refrigerating one for later.
This smoothie can be stored covered in the refrigerator for 3-4 days.
