Ingredients 

  • 1 English cucumber
  • 6 mini tomatoes
  • 3 ounces roasted red pepper hummus
  • fresh parsley, (chopped)

Instructions

  • Slice the cucumber into rounds.

  • Thinly slice the tomatoes crosswise.
    6 mini tomatoes
  • Spread the hummus evenly onto the cucumber slices, then top with the tomato slices.
    3 ounces roasted red pepper hummus
  • Sprinkle with fresh chopped parsley.

Notes

This recipe is for 2 servings. Each serving is 8 slices.
You can use any flavor of hummus in place of the red pepper hummus.
To prep the ingredients in advance, slice the cucumbers and tomatoes and store covered in the refrigerator for up to 4 days.
