Turkey Sausage Casserole with Veggie Tots

Whether you're making brunch for a crowd or serving up breakfast for dinner, this turkey sausage casserole with veggie tots is always a crowd-pleaser!

Ingredients 

  • 1 pound turkey breakfast sausage
  • 16 ounces frozen cauliflower or broccoli tots, (do not thaw)
  • 1 cup shredded cheese
  • 4 eggs
  • 1 cup half and half
  • ¾ teaspoon garlic pepper
  • ½ teaspoon dry mustard

Instructions

  • If your sausage is in link form, remove the casings.
    1 pound turkey breakfast sausage
  • In a medium skillet, cook the sausage over medium heat, stirring to break it up. Once the sausage is no longer pink, transfer to a plate lined with paper towels to drain.
  • Preheat the oven to 350°F. Spray an 11 x 7 inch casserole dish with nonstick cooking spray.
  • Layer the tots in the casserole dish, then add the sausage. Sprinkle the cheese evenly over everything.

  • Whisk together the eggs, half and half, garlic pepper, and dry mustard.

  • Pour the egg mixture into the casserole dish.
  • Place in the oven and bake for 40-45 minutes.
  • Once the casserole is golden brown, remove from the oven and allow it to rest for at least 5 minutes.

Notes

This recipe is for 6 servings. If you cut the casserole into 6 slices, each slice will be 1 serving.
Watching sodium? Substitute the turkey sausage for my lower sodium breakfast sausage, try to find a low-sodium cheese, and use fewer tots.
Watching fat? Use low-fat cheese, nonfat half and half, and an egg substitute.
Leftovers can be stored covered in the refrigerator for 4-5 days.
