Key Lime Date Balls with Pistachios

These 3-ingredient key lime date balls with pistachios are a perfect holiday treat! They’re high in fiber, full of antioxidants, and have no artificial sweeteners.

Ingredients 

  • ½ cup pitted dates
  • 1 cup shelled pistachios, (divided)
  • 3 tablespoons key lime juice, (or fresh juice from 3 key limes)

Instructions

  • In a food processor, combine the dates, ¾ cup of pistachios, and lime juice. Process until the mixture starts to clump and come together in a ball.
    ½ cup pitted dates, 1 cup shelled pistachios, 3 tablespoons key lime juice
  • Chop the remaining ¼ cup of pistachios and place them in a small, shallow bowl.
  • Use a 1½-inch cookie scoop or spoon to shape the date mixture into balls. Roll them in your hands, then in the chopped pistachios until well-coated.
  • Cover and refrigerate for at least 1 hour.

Notes

This recipe is for 10 key lime and pistachio date balls.
You can use 3 tablespoons of key lime juice or fresh juice from 3 key limes.
Leftovers can be stored covered in the refrigerator for up to 2 weeks.
