Indulge in the delicate flavors of this keto-friendly Matcha green tea ice cream! You can use an ice cream maker or a no-churn method for this easy, delicious recipe.

  • Place the base of your ice cream maker in the freezer the night before.
  • Add all of the ingredients to a medium mixing bowl and whisk until all the sweetener and salt have dissolved.
    3 cups heavy cream, 6 tablespoons granulated stevia, ¾ teaspoon xanthan gum, 2 teaspoons vanilla extract, 3 tablespoons vodka, 1 tablespoon green tea matcha powder, ½ teaspoon fine sea salt
  • Pour the mixture into your ice cream maker and follow the manufacturer’s instructions to churn your ice cream, usually 15 – 20 minutes of churning.
  • Once the ice cream is thickened and icy, scoop into a bread loaf tin or similar dish. Serve immediately or freeze for 1 hour.

Notes

This recipe is for 12 servings of ice cream.
No-churn method: Mix together all of the ingredients, then pour into a freezer-safe dish. Freeze for 45 minutes, mix well, then return to the freezer. Repeat every 30 – 45 minutes until the ice cream has reached your desired consistency.
The vodka helps keep the ice cream texture softer. You can omit if you prefer.
Extra ice cream can be stored covered in the freezer for up to 3 months.
