Sugar-free Cottage Cheese Parfait with Berries
Berries and cottage cheese come together perfectly in this no sugar added Cottage Cheese Parfait. Simply blend, top with berries, and enjoy as a healthy treat!
Servings 2 servings
- 8 oz. (225 g) low fat cottage cheese (about 1 cup)
- ¼ tsp. vanilla extract
- 1/8 tsp. cinnamon
- 8 drops liquid stevia
- 1 cup (150 g) berries
Combine all ingredients except berries in a food processor or blender.
Pulse until smooth.
Divide between two small bowls.
Top with berries and enjoy!
This recipe is for 2 parfaits.
You can top your parfait with any fruit you choose, although berries tend to be lower sugar than other fruits. You could also add toasted (non-salted) almonds or granola.
This dessert keeps very well! You can whip up a few batches at once and store leftovers in an airtight container in the fridge for up to 5 days.
