How to make cottage cheese parfait with berries

This recipe is super simple. It’s a great one to have in your back pocket for when you find yourself craving a little something sweet.

Step 1: Combine all ingredients except berries in a food processor or blender.

Step 2: Pulse until smooth.

Step 3: Divide between two small bowls.

Step 4: Top with berries and enjoy!

Choosing what fruits to go with cottage cheese

When you are ready to enjoy this easy treat, divide the creamy cottage cheese mixture into two small bowls or glasses. Then, you can top it with any fruits you like!

For my parfait, I like to use blackberries. I find the sweet and tart nature of the blackberries perfectly complements the creamy, slightly sweet cottage cheese layer. Blackberries are also a great nutrient-rich option that are packed with Vitamin C.

Berries always seem to be a popular option with parfaits, plus they tend to be lower sugar than other fruits. However, you’re welcome to top your parfait with any fruits you like. Some chopped pineapple or mango would be a delicious summertime treat!

Or, you could always go another direction and add some toasted (non-salted) almonds or low-carb granola. It’s entirely up to you how to enjoy your parfait.

Storage

Another great thing about this cottage cheese dessert is that it lasts. The cottage cheese base stores well in the refrigerator for several days.

I recommend whipping together a few batches at once so you can have a healthy dessert ready for you anytime! Just keep the berries on the side until you are ready to eat it.

Ingredients 

  • 8 oz. (225 g) low fat cottage cheese (about 1 cup)
  • ¼ teaspoon vanilla extract
  • 1/8 teaspoon cinnamon
  • 8 drops liquid stevia
  • 1 cup (150 g) berries

Instructions

  • Combine all ingredients except berries in a food processor or blender.
  • Pulse until smooth.
  • Divide between two small bowls.
  • Top with berries and enjoy!

Notes

This recipe is for 2 parfaits.
You can top your parfait with any fruit you choose, although berries tend to be lower sugar than other fruits. You could also add toasted (non-salted) almonds or granola.
This dessert keeps very well! You can whip up a few batches at once and store leftovers in an airtight container in the fridge for up to 5 days.
