Sometimes, I love experimenting with complex, creative recipes. Other times, I just want the easiest food possible.

This pulled pork tenderloin is definitely in the latter category! In fact, you only need two ingredients — pork and a vinegar-based barbecue sauce — and all you have to do is add both to the slow cooker.

Tenderloins cook much faster than other cuts of pork, so you only need about 3½ hours on High. I recommend using a thin sauce to keep the meat juicy and flavorful without turning it into pulled pork soup.

How to make pulled pork tenderloin

Slow cooker recipes are perfect when you don’t want to do a lot of prep. And this recipe is about as easy as it gets!

Step 1: Cut each tenderloin in half cross-wise.

Step 2: Place two pieces of tenderloin in the slow cooker parallel to each other, then place the other two pieces on top, perpendicular to the bottom pieces.

Step 3: Pour the sauce on top.

Step 4: Cover and cook on High for about 3½ hours.

Step 5: Use two forks to shred the meat directly in the slow cooker, then mix well with the liquid in the bottom of the pot.

Step 6: Turn to Low, cover, and let it cook an additional 15 minutes or so.

That’s it! This was enough pork to last my husband and me for more than four meals, and it only took about 10 minutes of prep. You can’t beat that.

Ways to eat pulled pork

So now that you have enough pulled pork to feed an army, what should you make with it?

The tender, flavorful meat is great to serve as your main protein with a side of vegetables or a nice salad. Roasted zucchini fries with Parmesan or lemony romaine and avocado salad would be so tasty.

If you’re looking for something more indulgent, serve it with whole wheat flax dinner rolls!

It also makes a perfect filling for a pulled pork sandwich. Simply serve it on your favorite bun and top with coleslaw. You can also try it in a wrap or in lettuce cups.

Storage

Pulled pork can be stored covered in the refrigerator for up to 4 days.

If you find that you simply can’t eat all of it in that amount of time, it also freezes very well! I recommend separating it into portions so it’s easy to thaw one or two servings at a time.
