When I’m looking for a quick and healthy snack, I usually make something with vegetables. Hummus with carrot sticks or a healthy dip with cucumber slices instead of crackers are some of my go-to’s.
So one day, I decided to combine the two! The result is these cucumber bites with hummus and tomatoes, and they are so delicious.
Not to mention, they’re also very simple to make. Just top crisp cucumber rounds with your favorite hummus and a dab of tomato.
There’s no better summer snack when cucumbers and tomatoes are both in season!
How to make cucumber bites with hummus and tomatoes
This recipe comes together in 4 steps and with only 4 ingredients.
Step 1: Slice the cucumber into rounds.
Step 2: Thinly slice the tomatoes crosswise.
Step 3: Spread the hummus evenly onto the cucumber slices, then top with the tomato slices.
Step 4: Sprinkle with fresh chopped parsley.
In 10 minutes or less, your hummus and tomato cucumber slices will be ready to enjoy!
Variations for this recipe
I think the flavor combination of the roasted red pepper hummus, tomato, and parsley is fantastic. But if you want to get a little creative with your toppings, go for it!
In place of the red pepper hummus, feel free to use another flavor of store-bought hummus. You could also make your own if you’re feeling adventurous.
For example, try making hummus with chopped roasted red peppers, capers, and fresh thyme. A sprinkle of feta on top would be wonderful.
Storage
Want to prep these bites ahead of time? Simply slice the cucumbers and tomatoes, then chop the parsley.
Then, when you’re ready to enjoy, all you have to do is assemble the ingredients! The sliced veggies and parsley will stay fresh in the refrigerator for up to 4 days.
