I’m glad to see so many coffee shops now offering sugar-free and dairy-free options. But I’ll admit that I don’t love paying $5 or more just for a drink, and dairy-free milk almost always costs more.
That’s why I prefer to make this skinny vanilla almond latte right at home! You only need four ingredients, and your delicious beverage can be ready in about three minutes flat. No espresso machine required!
In fact, all you need is a coffee maker, an immersion blender, and a microwave. Heat, blend, pour, and serve.
I do want to point out that this isn’t a “true” latte. While traditional lattes are made with espresso, this version is made with coffee. That being said, the frothy milk and sweet vanilla flavor always satisfy my cravings for a latte!

How to make a skinny vanilla almond latte
This delicious drink comes together in five simple steps. Ready to see how it’s done?
Step 1: Place the almond milk, sweetener, and vanilla in a deep microwave-safe measuring glass.
Step 2: Microwave on high for 1 minute.
Step 3: Mix with an immersion blender until the mixture is frothy.
Step 4: Pour into a cup.
Step 5: Fill the rest of the cup with coffee (or pour the milk into the coffee).
In about three minutes flat, you’ll have a dairy-free latte ready to enjoy!
Variations for this recipe
This basic latte recipe can be customized however you like! Feel free to adjust based on your tastes, preferences, or what you happen to have in your kitchen.
Prefer another kind of milk? Macadamia or cashew milk is good for low-carb. If you don’t mind a few carbs, oat or hemp milk are two other great options.
Want to try some other flavors? Switch up your extract! Almond, maple, hazelnut, toffee, or even chocolate are all tasty variations.
I make this with a low-carb sweetener like Stevia, Monkfruit, or Erythritol, but you can use honey or agave nectar if you don’t mind a few come carbs in your latte.
Which is better for diabetics, tea or coffee?
Green tea is my hot beverage of choice most of the time, but every once in a while, I crave coffee. If I’m eating a big Southern-style breakfast, for example, it just seems wrong to have green tea with ham and eggs.
But which one is best from a health standpoint? Should diabetics drink coffee or tea?
Surprisingly, studies don’t seem to favor one or the other. Neither has been proven to impact blood sugar levels positively or negatively.
In reality, caffeine is a drug that is going to affect every individual a little differently. Pay attention to your body and talk to your doctor if you’re unsure. But overall, if you prefer coffee or tea, there doesn’t seem to be strong evidence that you should drink one over the other.

Storage
This drink is best enjoyed right away. You can store it covered in the refrigerator for a few days if you don’t finish your cup, but keep in mind that the milk will lose its frothiness the longer it rests.
Want to prep your drink ahead of time? You can always mix together the milk, sweetener, and extract, then store covered in the refrigerator for up to a week. When you’re ready to enjoy, pop the milk in the microwave and follow the recipe as usual.
