  • Olive oil – Extra virgin olive oil is best for flavor and higher antioxidant content.
  • Parmesan – Freshly grated Parmesan helps bind the ingredients and adds a cheesy note.
  • Flax seed powder – A fantastic source of omega-3 fatty acids and fiber, this ingredient also acts as a binder.
  • Egg – This helps bind the meatballs and keeps them moist.

How to make chicken meatballs

Step 1: Preheat your oven to 400°F (200°C) and line a baking tray with a silicone baking sheet or tin foil. Grease and set aside.

Step 2: Add all of the ingredients to a large mixing bowl.

Step 3: Stir until all of the ingredients are well combined, then let the mixture rest for about 5 minutes.

Step 4: After the mixture has rested, roll into 12 meatballs and transfer them to the baking tray.

Step 5: Place the tray in the oven and bake for 30 minutes until the meatballs are slightly golden and fully cooked through.
