Casseroles are one of my favorite kinds of recipes. They’re great for feeding a crowd, or you can use them to meal prep for the week. Minimal work turns into lots of meals.
This turkey sausage casserole with veggie tots is just the kind of hearty casserole that works for either scenario! It’s perfect for a big brunch party, to enjoy as breakfast throughout the week, or to serve as brinner.
And the beauty of this recipe is that most of the ingredients come pre-made straight from your freezer. So all you have to do is throw everything together!
It’s quick, easy, and absolutely delicious. And it’s an excuse to eat eggs for any meal of the day.
How to make turkey sausage casserole with veggie tots
Ready to see how this hearty egg casserole comes together?
Step 1: If your sausage is in link form, remove the casings.
Step 2: In a medium skillet, cook the sausage over medium heat, stirring to break it up. Once the sausage is no longer pink, transfer to a plate lined with paper towels to drain.
Step 3: Preheat the oven to 350°F. Spray an 11 x 7 inch casserole dish with nonstick cooking spray.
Step 4: Layer the tots in the casserole dish, then add the sausage. Sprinkle the cheese evenly over everything.
Step 5: Whisk together the eggs, half and half, garlic pepper, and dry mustard.
Step 6: Pour the egg mixture into the casserole dish.
Step 7: Place in the oven and bake for 40-45 minutes.
Step 8: Once the casserole is golden brown, remove from the oven and allow it to rest for at least 5 minutes.
That’s it! All that’s left to do is cut the casserole into 6 slices and dig in.
Variations for this recipe
I already mentioned a few of the reasons I love casseroles. Another reason is because they are so flexible!
You can easily customize this recipe based on your tastes and preferences. Feel free to make it exactly how you want it.
Watching your sodium? I recommend using my lower sodium breakfast sausage instead of the turkey sausage. You can also try to find low-sodium cheese, or just use fewer veggie tots.
Want to lower the fat content? Use low-fat cheese and nonfat half and half. You can also replace the whole eggs with an egg substitute.
Looking for a bit more spice? Use a hot Italian turkey sausage.

Storage
This casserole will keep very well in the refrigerator. That’s what makes it great for meal prepping.
Simply store your leftovers covered in the refrigerator and enjoy within 4-5 days. I think the slices reheat beautifully in the microwave.
