There’s nothing better than a cold, creamy treat when it’s hot outside. But instead of spiking my blood sugar with ice cream, I prefer to indulge in this delicious homemade frozen yogurt bark!

I first made this recipe when my husband was out of town. When he got home and discovered the yogurt bark in the freezer, he kindly asked if he could have some of “the purple stuff.”

Before I knew it, half the pan was gone!

Thankfully, it was so easy to whip up another batch. In fact, all you have to do is combine the ingredients and allow them to set in the freezer. How simple is that?

How to make frozen yogurt bark with blueberries and almonds

This recipe only takes a few minutes to prep. After that, you simply have to give the bark enough time to set.

Step 1: Line an 8- x 8-inch freezer-safe baking dish with parchment paper.

Step 2: In a large bowl, combine the yogurt, frozen blueberries, almonds, and honey.

Step 3: Spread the yogurt mixture into the prepared baking dish.

Step 4: Place in the freezer until the bark has set, about 3 hours.

Step 5: Let the pan sit at room temperature for about 5 minutes to soften. Then, remove the yogurt bark from the pan, peel off the parchment paper, and break into pieces.

You can serve this treat immediately or put it back in the freezer to store.

Variations

The combination of blueberries, almonds, and honey is delicious in this frozen yogurt treat. I could eat it all day.

But it certainly isn’t the only ingredient combination. In fact, there are so many different ways to make this yogurt bark!

Try swapping the frozen blueberries for another fruit, like frozen strawberries or raspberries. You could even do a berry blend!

The slivered almonds could be replaced with other kinds of nuts as well. Just be sure to chop the nuts pretty well so they’re easy to eat.

For something a little sweeter, you could use vanilla yogurt instead of plain or try adding more honey. Also, feel free to throw in a few sugar-free chocolate chips. You could even swirl in some peanut butter for a truly decadent treat!

Storage

Be sure to keep your yogurt bark in the freezer so it doesn’t melt. It won’t stay solid in the refrigerator.

This treat will stay fresh in the freezer for several months. But unless you hide it well, I doubt it will last that long!

Notes

You can also customize this recipe with your own add-ins. Try another fruit, different chopped nuts, or even sugar-free chocolate chips.
