Low Carb Taco Meatloaf

Traditional meatloaf gets a boost of Mexican-inspired flavor in this delicious low carb taco meatloaf recipe! Taco seasoning and salsa give it just the right kick.

Whether you’re craving Mexican-inspired flavors, have some salsa you need to use, or simply find yourself dreaming of hearty meatloaf on a Taco Tuesday, then this recipe is just what you need!

Low carb taco meatloaf is everything you love about classic meatloaf, but with a serious boost of flavor. And it’s just as easy to make as the original.

Taco seasoning and green onions really bring the ground beef to life. Then, instead of a tomato sauce, you’ll top it with fresh and flavorful salsa before the bake!

Something about this recipe is just fun. Plus, it’s easy to throw together and turns out absolutely delicious. So really, what’s not to love?

How to make low carb taco meatloaf

Much like the classic version, this dish comes together in just a few simple steps.

Step 1: Preheat your oven to 400 F (200 C) and line a loaf pan with baking paper. Set aside.

Step 2: In a large mixing bowl, add the ground beef, eggs, almond flour, and 1½ cups of salsa.

Step 3: Mix well.

Step 4: Add the olive oil, green onions, taco seasoning, salt, and pepper. Mix until completely incorporated and the spice mix is dispersed throughout the mixture.

Step 5: Spoon the mixture into your prepared loaf pan. Use a wooden spoon to smooth the top over.

Step 6: Top the loaf with the rest of the salsa in an even layer.

Step 7: Place in the oven and bake for 1 ½ hours until cooked through.

Step 8: Remove from the oven and allow to cool for 10 minutes.

Once the meatloaf has cooled, you can cut it into 10 slices and serve!

What to serve with meatloaf

Meatloaf — whether classic or taco-flavored — is a hearty dish. That means we can keep toppings and sides pretty simple.

First, I definitely recommend enjoying this dish with some avocado and fresh cilantro. The avocado adds healthy fats, plus it’s just delicious. And the fresh cilantro gives it another layer of flavor!

You could also serve with a little sour cream or even some shredded cheese. If you would normally put it on your taco, it will be tasty with this meatloaf.

For your sides, I recommend keeping it light. You can never go wrong with a fresh, crunchy salad!

Storage

Once the meatloaf has fully cooled, you can store it in an airtight container in the refrigerator. It will stay fresh for up to 3 days.

You may notice that the flavors are even better the next day. If you ask me, that’s why meatloaf is a great way to meal prep!

Ingredients

  • 2 pounds ground beef
  • 2 large eggs
  • ½ cup almond flour
  • 16 ounces salsa
  • 1 tablespoon olive oil
  • 2 tablespoons green onions (chopped)
  • 2-3 tablespoons taco seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 avocado (for serving)
  • 1 tablespoon cilantro (chopped – for serving)

Recipe Notes

This recipe is for 10 servings of meatloaf. If you cut the loaf into 10 slices, each slice will be 1 serving.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
